The YT vid that I watched was before SU7. Now that option of turning off the HUD is no longer in the chase camera section.
Also, have they added a replay function into the sim?
The HUD settings are now in assistance options. Last one on the left.

Please go to
Options>Assistance Options>User Expereience to turn the hud off or on.
As for replay function yes when developer mode is enabled you can easily use it.
Read the release notes or search forum for Hud.
