So this is a known issue at XBOX version but it also occurs at PS5 Version too.
It would be better if this is fixed before PS5 launch.

Description of the issue: When you fly any aircraft by hand (autopilot is not engaged) with the Xbox controller / gamepad, and engage Cursor Mode, an AI pilot takes over control and completely messes up the flight. This can be anything from full throttle to no throttle at all, random direction changes, etc.

Everytime.
REPRODUCTION STEPS
Spawn with any aircraft.
When flying and on Autopilot. Enable cursor mode.
Monitor speed as “AI pilot” sets speed to max or idle.
Could another option be to just keep “straight and level” flight when in cursor mode? That seems more effective than the current function of AI piloting in cursor mode. I’ve noticed this with the flight control surfaces as well as the throttle when in cursor mode.
Hmm, when I enable the cursor mode no autopilot is engaged on ps5. But I would invite an option to auto enable the ‘pause’ in cursor mode.

In the meantime for a workaround:
Set Assistances to Default Assists, and then set assistances to your desired preference.
This workaround doesn’t work on Xbox in Sim Update 4.
