The options to tune FPS limits are greyed out, I have tried everything, the game maxes out my PC and gave me a scare because the PC is hooked up to an inverter and the power went out mid-gameplay and it was scary as hell, screen was smudged and pc just powered down when the inverter cut in, is there no way to limit how much resources the game draws from a system (apart from the global FPS cap in the Nvidia system options)?
Disable frame generation

You can set a specific limit for MSFS without affecting any other applications…
If you’re using the MS Store version, path for the .exe is whatever drive you’ve installed it on, followed by…
‘…\XboxGames\Limitless\Content\FlightSimulator2024.exe’

Bingo, thanks for the tip.

I think the solution from @BeardyBrun is also very valuable. This way you can (as far as I know) keep frame generation on and still get a 60 fps cap. Best of both worlds
