Is there a utility that can read the AI traffic currently active in the Sim?
Little Navmap.
At least you can see all AI aircraft and ships on the moving map including all available information when you click them.
Also there is AI Companion if using AIG. It provides departure and landing tables for flights planned so you can spot them.

You can use Little Nav Map,that shows you all the AI traffic around you.
Unfortunately MS/Asobo is not able to make the Multiplayer visible outside the sim,
which was no problem in all the sims before.
I was thinking more of a data extractor rather than visualization.
I don’t think there is one. You could only create a tool to fetch such data from Simconnect but I guess for most people there is not much of a value for doing that without any particular reason 
The only other thing for just viewing what actually is active is looking into ai traffic debug when in MSFS dev mode.

Sounds like a good candidate for a Flow script, you could make a request on their support site.
