I enjoy flying with stick controlled aircraft, and recently got my hands on a force feedback stick. Stick aircraft are often more agile and have more direct input to the control surfaces. They also give a better view of the instrument panel.
Off the top of my head, my favourites so far from my small collection may be the Socata TB-30, Scottish Aviation Bulldog, due to their nice flight models. And of course many helicopters.

A few Broncos here. How good is it? I’m on the fence so far.
I actually use my yoke for these. Both these aircraft use a side yoke that feels more like using your left hand on a yoke rather than a stick you can’t pull in or out.
I like using my HOTAS in bush planes and helicopters. Typically if the aircraft has a stick and rudders I fly with my HOTAS. If the aircraft has a yoke and rudders then I fly with my yoke.

One of course rotorcraft.
Love pretty much everything about it except that if you fly 1 knot under the stick shaker the wing drops uncontrollably.
I have both a yoke (TM Boeing) and sidestick (TM Airbus) hooked up simultaneously, so I can switch modes in an instant. I deal with some arm tendonitis, so it’s nice being able to change when hand-flying.
I recently got five (!) new taildragger bush planes (Kitfox, Wilga, Rans Coyote, Savage Carbon, and Savage Grrarvel), and these definitely have a learning curve for takeoffs and landings. I’m using both stick and yoke to perfect my technique.
Favourite? All of them in as much as that as yet, I dont use a yoke.

In kinda-sorta order:
-Caranado WACO, with head tracking and good pedals, it’s like IMAX
-Monster NX just a brutal do it all aircraft. This may be my favorite plane for being stupid. You can take off on a 70 degree angle on the juice, immediately roll over and parchute full flap crab back down and land right back on the pianos without leaving the airport-or fly the length of the runway in full deflection crab 2’ off the ground at under 40KT. Or cruise at 140+ whateva…
-Wilga just ■■■■ good and different. Wilga time is Wilga time to do Wilga things.
-Asobo Husky, when I want to just fly an honest cloth bush plane-real underdog hero aircraft. best sense the amphibian having the weight of floats on it in the FM. Even stuck with the portrait it’s still great to fly.
-Savage Carbon(I like the Grravel too-but prefer the Monster NX for gonzo) Has it’s own little envelope between the others.
-DR400 oddly enough, it grows on you. Only add-on it a KT IAS conversion(and a tablet). Great frumpy-dump
-Really think all the Diamonds in general are good, like the really basic analog one(forget the name)
-Deejing’s RAV’s, the RV4 in particular is in a class of it’s own. Only real snap roll I’ve found. and the RV7 is a bit cough-cough better than the SWS Rans FM’s
-GF Wildcat. GF has a sense for taking data and adding the love needed to adjust for the MSFS world. The 172 of warbirds, if had only a weee bit more of this or that…Makes you work for it.

-ICON A5 is better than it gets credit for
-Shock Ultra, hiding in plane sight. Great aircraft.
-SR22T, for doing what I’m supposed to be doing. I do move the stick to the left/quad to the right and tilt/angle the stick to match the armrest for this one.
Plenty of other good ones. These always feel worth the effort though. Don’t really consider ‘side stick’ aircraft or Helis or even most warbirds quite the same as stick aircraft though. Only the SR22T barely squeezes in there. I put the Wildcat in there because you can’t just do what you feel like doing in an instant.
Some other ‘heroes’ I’m not enamored with with are the (updated)FFox and TigerMoth, mehh.
