I’ve had a lot of fun flying from EGEO Oban, North Connel, Scotland. It’s a freeware airfield available off flightsim.to beautiful scenery all around and a fun approach especially with live weather. Great place to practice take offs and landings.

Agree with all the above. Also, this website may help you if you are looking for some challenging weather across the world to jazz things up 
You can choose where in the world you narrow in on, wind and gust strength, visibility, rain, etc, etc - it’s a great way to explore where you may otherwise not think of going. Brilliant site.
