When I use the msfs propeller plane, the throttle often jumps around when taking off, and often when the throttle is full, it suddenly automatically backs up and the plane crashes. How to solve it?

Have you calibrated your throttle?

I would definitely look at calibrating the joystick.
While calibrating, look at the controller output and look for noise on the various axes.
Also! The Saitek/Logitech X52 controllers sometimes develop loose/noisy connections on the cable connecting the throttle unit to the joystick unit. I always “jiggle” them a bit before every flight to make sure they’re securely attached.
I am having the exact problem. It is not on just one plane. It started with the default C172 (steam gauges) , I switched over the the Just Flight PA-28. Same behavior.
I had thought it my be my joystick (Logitech Extreme 3D) so I calibrated it. Same behavior. I am sitting on the runway, put the throttle to max, plane will start down the runway, the the throttle will go to idle, I push it back to full, back to throttle after 10 seconds. I have to (using the mouse) manually hold the throttle in the full position. Using the flight controller does not work. I take off and then it stays put.

If you have assisted takeoff, the throttle drops and a bug has been filed.
See if that helps and then you may want to add a comment to the bug report.
