I see this in Africa also. I assumed it is related to areas where there isn’t actually any Bing data.

Yes it’s obviously generic scenery replacing poor satellite imagery, not ideal but far far better than having great big clouds drawn on the ground.
This has been a ‘feature’ since the start. Also seems to happen when the MSFS servers can’t stream data to you fast enough … I’ve seen this happen in patches and then later on the return flight had perfectly good, clear satellite imagery in the same place.
Makes sense I guess - if you can’t get the proper imagery for whatever reason, the program has to put something in place instead just as @somethingbrite says.

Thanks guys, that’s what I suspected. Hopefully this gets taken care of in the future.
