Same problem here Full-screen mode does not âsaveâ - have to reset it every time I launch the sim.

I have in options to use fullscreen (saving and exiting). Launching MSFS goes to window mode ignoring my saved option (option goes back to windowed save).

Brief description of the issue:
As title says, sim starts in Windowed mode every time since last Beta update. Alt + Enter clears but shouldânt have to. Also the sim now checks or updates for an extended time with every start.

I can confirm that it is happening to me too.
Confirmed for me as well. 1.37.8.0
Sim drops to Windowed mode on every launch after check for updates. Setting back to full screen doesnât persist for subsequent restarts.
Glad to find this thread as I was unaware of the Alt-Enter workaround.
This has always been somewhat annoying even for valid non beta updates through the life of the sim. The update process places the sim in Windowed mode and you have to manually set it back to full screen. It would be much nicer if the sim could identify the current display mode and return to that preferred mode upon completion of the update process.
Normally this only happens a few times a year when updates are released and a little more often if youâre subscribed to the Betas. With 1.37.8.0 itâs now on every startup of the sim and a much bigger issue so hopefully this can get fixed soon.

This same thing started to happen today in SU 14 v1.36.2.0, so now itâs not just a SU15 bug.
