Hi @BinaryFiddle, FYI there is a bug report on this:

Aircraft variant and livery setting is not saved between sessions. (it did in 2020)

ISSUE DESCRIPTION Description of the issue: Every time the sim is restarted the last used aircraft is still active, but not the livery and variant. This worked in MSFS 2020, but somehow it only remembers the aircraft type now and not the rest. [PC Only] Did you remove all your community mods/add-ons? If yes, are you still experiencing the issue?
