I have the “Translate Cockpit View Forward” (and back) assigned to arrow keys on the keyboard. Did the same with “Translate Cockpit View Left” (and right).
Using these, I moved the view around so that all the HUD info fits as it should.
Drill down is as follows:

Controls Options
Keyboard
Camera
Cockpit Camera
Translate Cockpit View…

Oh, I just did a flight and cycled the Landing Gear up/down several times with no issues.
FYI- I use the Heavy Division B78XH mod (highly recommended).
Thanks for the suggestion and pointers. It does sort of boggle the mind, however, that Asobo would setup the 787 HUD - a significant feature of the single signature plane that inspired so many of us to spring for the Premium Deluxe version in the first place - such that the default pilot seating position makes that feature unusable. I think some of the devs need to do more clean installs and note how things like default cockpit views and other standard, out-of-the-box settings look with each new update.
I agree with you 100%. Boggles the mind… that phrase does come up often as I think about implementation and the decisions made. The word inexplicable comes to mind often as well.
I got the same problem both on the Asobo and on the Heavy. Was fine up to SU6, now getting a zoomed part instead of the properly sized display. Indeed, before SU7, when you would move the view inside the cockpit, you could not see the info on the HUD as well but when you were centered in the pilot position, it was fine. Not any more, no sir …
The F/A-18 HUD also suffers from odd zoom and pilot placement issues. It’s a pain sometimes, and I can’t see all the info on the HUD at one time. Kind of defeats the purpose, no?
Clearly the folks setting the default camera positions don’t understand how real-world HUD systems work, nor how collimation affects things.
And make no mistake - a properly collimated HUD system is great and it’s fantastic that it has been implemented. But the way the image is projected to a fixed point such that the movement of the viewpoint actually changes what is visible? That seems to have eluded the people responsible for default viewpoints.
Something goes wrong with the airliners EVERY UPDATE. This makes me believe that absolutely no one is in charge of making sure the airliners are not screwed up in every update. No testing is done. No attention is paid. Because the bugs are so obvious that you can literally test them in the first minute of the flights.
What’s worse, this HUD “fix” was actually in the patch notes which means they know that HUDs of planes would be affected and no one cared to check the 787 HUD. Hilarious
It doesn’t boggle the mind at all. They set it up perfectly but they did not communicate that to us. There is a new setting in the camera section. I forget the exact name but others have mentioned that it is set to use the HUD. No doubt this is done for Xbox players. If you assign a camera view to this “HUD view”, then everything looks as it should.
You are making the mistake that this game is designed for PC players.
Unfortunately, Asobo has been doing the same thing (adding/moving settings without communication) since the sim launched, well before XBox folks got involved.
But thanks for the heads up about the new setting. Time to create another new controller profile.
Naaa, not that easy. Of course you can set a camera position that is close enough to the HUD to view all content. That doesnt eliminate the flaw that all content has to be visible from the default pilot head position without the need to crawl into the HUD. Actually it is still to magnified at all.
Just compare the views in the video linked above and the actual behaviour of msfs 2020.
