MSFS Career have ignored one very important rule: **It’s always the pilot that have the final word.
In settings the option to allow the ATC to change runway is greyed out. That will sometimes on long hauls, where the weather at destination airport changes during the flight, force me to land in windconditions outside of the airplanes limitations. And if I try to request a new approach, ATC/career “ignores” me. THAT IS WRONG!
14 CFR § 91.3 — Responsibility and authority of the pilot in command
(a)“The pilot in command of an aircraft is directly responsible for, and is the final authority as to, the operation of that aircraft.”

Could you provide a screenshot of the screen where you are seeing this option greyed out ?
Maybe this wish is about the option you are referring to ?: Uncheck "ATC Enforce Flight Plan" for Career Mode
The pilot is in command of the aircraft, the tower operators for the approach path and runways. A pilot has to follow the directions of atc to a star, or along vectors.
I don’t think you quite understand. When this setting is ON then even ATC cannot change my approach due to weather, even if I would be landing with a tailwind. ATC is not permitted to deviate from the original filed flight plan.
I can certainly ignore ATC and land on a different runway, but I would be penalized for doing so.
