Flight sim fun can be a bit of a bottomless money pit.
In my case at least it is a continuous work in progress. (with still much to do. - I need 3 matching monitors when multi-monitor support rolls round. At present the two side monitors are actually for companion apps (as is the mini monitor at bottom with my PFD/instruments on.)
There are 2 PC’s running this. One doesn’t need to be super special, it just runs companion apps so I used an old pc I had kicking around.
But it’s an enjoyable ride and a fun hobby all the same.

I’m left handed so the hotas throttles are on the wrong side.
The joystick is a left handed Virpil Constellation Aloha. There are pedals under the desk.
Apart from the monitors I have plans to…
Build a desk frame or something out of extruded aluminium profile and mount the controls on some sort of sliding rail to move them aside when regular gaming or using pc for design work.
3d print/build some additional controls. Authentikit have been very prolific. Check out their stuff.
I’ll probably print/build a landing gear, lever, trim wheels and a couple of miscellaneous levers I can map as flaps axis or fuel mix or whatever.
I have a longer term plan to print/build a TBM 930 throttle kit which a genius on the web designed which I’ll probably mount under the 2 Virpil throttles.
Companion software in use.
Little Navmap, OnAir airline manager, SkyElite (but there are many more to chose from)
So…the possibility to do all the above (including self build controllers) is what PC offers me that a closed ecosystem like a console cannot.
For a monitor if you have 4 already and your just doing it for MSFS then 60hz 4k is fine, If your going to be doing other things, like FPS gaming, not only do you have to think about refresh, but also check access times for the monitor. I have a MSI Optix 165mz monitor, I could of gotten a little bit bigger faster refresh monitor, but those all access times in the 2-4 ms range. This one has a 1 ms access time. There is also one other setting to look at but at the moment it escapes me.
I agree with your sentiments exactly in that the “openness” that the PC allows over the console drew me over.
It’ll be a few weeks before everything comes in but once it does maybe you and I could link up and I could get your assistance with setup, config and the likes and then maybe take a flight together?
I have Honeycomb yoke and quadrant, Logitech radio panel. I fly in VR exclusively, so what I did was to create two profiles for each type of aircraft, one to be use in VR and one for 2D. The only differences between the two, is that the VR profiles have the “toggle switches” (including the Engines/magnetos switch on the yoke) on both Honeycomb disabled, that way I don’t have to fumble in the dark trying to remember where each switch is and allows me to use the switches inside the cockpit, which in VR is more realistic. If you don’t disable the toggle switches, you will not be able to change its positions while in the VR cockpit. For the radio panel, if you are good in finding the knobs in the dark, use the top for comm and set the lower for Nav, but honestly, I rather do as much as possible inside the VR cockpit for better immersion. I use the landing gear and flaps on the quadrant, depending on the aircraft. Once you try VR you never look back.
Your base system is almost identical to mine.
Only difference is mine has 2x NVme drives plus 2tb and 8tb standard SSD
Standard hard drives are finally gone form me except for the network storage used for back ups

Just do not understand why you ordered those CH Pro Pedals
To keep inline with your RT 3090 I would have ordered other pedals (Exchanged my CH Pro Pedals for MFG Crosswind V2 pedals)
Personally I would add a track IR. Adds to the immersion.
As monitor setup I am using 3 Dells 25’’ IPS/Fixed Framerate and 1 Dell 24’’ IPS monitor . They are hooked up to a Radeon RX6900XT using Eyefinity. This means the primary flightsimwindow runs at 7810X1440. On the 4th one I can run other programs. Navigraph, or undock the mapview, or some panels

I have 3 Samsung 27" G7’s fuzed into a single monitor as far as the computer is concerned, so I am playing on a 7880 x 1440 monitor with a single 1080p 15" for maps and such. It works great as long as Nvidia stitches them together correctly on boot, and don’t let them sleep
Well, you could say I won the lottery, got rid of the wife 4 years ago bahaha. No need for remortgage, had some funds put away for a rainy day project and this has been on my mind for awhile as a plan B if the XBOX route didn’t pan out the way I wanted.
As for the pedals deffinetly better options out there. I think I went pretty good build quality everywhere else and felt based on feedback from others that these would certainly do the job at a good price point. THey will just have my stinky feet on them anyway and give me something to look forward to upgrading later.
I did end up ordering Track IR based on other recommendations.
FOr monitors I ended up going with a 38" 4K Ultra Wide Curved IPS pannel 1MS response @ 144Hz.
I have a variety of other Dell Pannels that all match that I could toss in on the sides for add-ons like you and others have suggested.
My CH Pro pedals did an excellent job for 10+ years. Had to open them only twice for soldering those broken thin wires from the pots to the IC😉
