I have 24 GB, but while flying in MSFS I didn’t notice more usage than 16 GB even over some more complex scenery, plus running few tabs in Chrome and Little Navmap.
I have a 128gb. It makes no difference at all. In msfs it is barely utilised. (4090 and i9). I see approx 17Gb usage in total which is actually quite disappointing. My 128GB was not intended for MSFS of course, but it would have been a nice side effect.
Before SU5, tests were made and found that upgrading from 16 to 32 GB improved stuttering and 0.1% lows significantly. After that, everything changed and RAM / VRAM requirements dropped.
I still see 13-15 GB of RAM used in certain conditions (airliners, PG cities) so I think 32 GB is still the sweet spot, also considering how cheap RAM is now.

One question to the experts, does speed matter a lot as well, I went with the highest available.

CAS latency is probably as, if not more important, than published speed.

‘CL22’ is the number you’re looking for to indicate latency. I’m no expert by any means and wouldn’t begin to know how to overclock RAM properly, but believe 22 is quite high (which is worse).
Have a look at this;
Think the best improvement with ram is using dual channel over a single stick. 2 x16gb is all you need. Going to quad channel isn’t really any better vs dual.

I have 64GB DDR5 RAM @ 5600MHz. Very useful in DCS but not so much in MSFS.
What made a big difference for me, was increasing my virtual memory to match my 16GB physical.
This was back when we were all suffering from CTDs. Worked for me.

I upgraded from 8 to 16. No difference at all.
Can you check your ram usage when opening task manager. (While flying)

Only 58% strange, I had much more. Perhaps someone else can jump in here to explain.
Maybe your GPU is limiting factor here.
I5 10th gen GTX 1650 HP Gaming laptop. Pretty mediocre gaming laptop. But on a 65in TV and using Nvidea filters it looks pretty dang good, almost 4kish. I lock the frames in the NVidia control panel at 30 for smooth play. and it keeps my gpu temps down. No stutters and I get mainly 30fps. What I mean by no difference is, I don’t see any difference to my eyes anywhere in the sim or the laptop for that matter. It ran the same with 8gb. I wouldn’t pass a blind test to know if that extra 8 gb was in there or not.
