I’m new to all this, first update for me on X-Box, is there somewhere I can look to see exactly what the software update contained please?
Not the worldpacks just the app update 
The update is simply a World Update. MS has discontinued bundling sim code fixes in with World Updates. Those will be addressed strictly in Sim Updates, the next of which is now scheduled for 01-Mar-2022.
So would it have affected ATC - not in a bad way but mine was really babbling this morning, its usually quiet and also had a female voice in the mix too - not heard that before??
No it would have not.
I suspect you may have had some settings reset in your Options-General. You may want to review all of them just to make sure nothing you set before has changed. Why it reset I have no idea, but that would be my first diagnosis given what you just described.

Interesting, i deleted the rolling cache after the updates as well, the “use rolling cache” option was set to off - i left it there.
I like the ATC how it is, seems much better but baffled as to what option may have been reset or why.
I made several flights today and it all worked smoothly, no stutters or CTD’s - i’ll leave the rolling cache off i think.
This is the list of what was contained.
As mentioned this was a World Update, (WU) not a Sim Update (SU)

Slightly confused now - that showed “optional world update…” but what i had was compulsory, it launched immediately upon starting the app??
I’m not sure why that happens, but I believe all WU’s can be uninstalled from the Content Manager.
The compulsory part was improved / missing airports and other content aside from Australia, which remains entirely Optional, as has all World Updates. You need to deliberately pull the WU down from Marketplace.

It all seems happy so I’m happy. I was most interested to see if the update included anything to do with ATC and so on.

The only settings that might make a difference in ATC speech is the “Offline” or “Azure” selection as mentioned in the General Options - Sound.
Your Pilot - CoPilot avatar could have changed as well in General Options - Misc.
Why options seem to change on their own, I don’t know!
There is an ATC upgrade scheduled.
It is #8 on the Bugs list
