You get the weather as a file from Simbrief. You download it as part of your Plan.
In the FMC you go to RTE DATA and the request weather. It will then read in the weather from the downloaded file

PMDG recommend you regenerate this file on really log flights and re-request it so you have updated weather.
Also for landing so when you are close to TOD
You press the DES Button on the FMC > Forecast and again request Weather which uses that file and sets up the descent profile then with weather information. I usually regenerate it before I request it
