Thank you for the sum up! I wasn’t expecting this thread to reach this many posts when first throwing out the question out of confusion. And I really appreciate all input from pilots and devs along. It clearly shows how the sim community collaborates in sharing their experiences and knowledge on this rarely discussed flight behavior, from which I learned a lot!
@SimbolFSReborn Having learned that about the Sting S4, I would definitely grab it along with the M500 
Ultralights are fun, except I discovered that MSFS realistic turbulence is a little too much for me so I turned down to medium. Surely going to have some good time in it.

Don’t worry we re-tweaked the S4 flight model once again after SU10 to cater for MSFS crazy turbulence behaviors, you will find the S4 very pleasant to flight with turbulence set to medium.

For most smaller GA plane, the current “Medium Turbulence” you appear to be “Typical”, while the “Realistic” setting is more like "You must be crazy to be flying a small plane in this – RIP )
