This will be different for each person. It will reflect your interests, your preferred type of flying, experience, and more. Best advice is look within before flying, then try what fits your own style. Eventually your sim use will mirror you.
By the number of “The A320 is broken. The sim is unplayable” threads that have popped up in the last months, I would guess that it’s one of the top planes. It’s not my thing really, but whenever I’m at a major airport and I have MP turned on, there seem to be more players in A320s than any other. So I’m guessing that’s the most popular overall, or at least in the top 3 at the very least.
On a personal note though, it depends what I’m doing. The TBM is my favourite for many reasons. If I’m doing long range IFR flights, this is my bird of choice. Although the Longitude (now that it’s fixed) is getting a lot of air time as well.
For single engine pistons, the Carenado Mooney M20R was my top pick until it got broken. 2 months ago and still doesn’t work. Since then, the SR22 and Bonanza have filled its role. I’ll use these mostly for short-medium range IFR flights, sometimes VFR as well. I’ll often use the C172 (both variants) for short range flights.
For VFR sightseeing tours, it’s the JMB VL-3 + Rotax 915 mod all the way. Can’t beat that plane for sightseeing IMHO.

A320 with the flybywire mod is very playble, i play every day and is very very playable, no particular issues !
For me, it’s the Cessna 152, 172, DA62 and maybe PA44 (when I’ll be able to afford it ;__; )
C172 without G1000.

By complaints, yes the tubeliners and bizjets are popular. Sorry folks, I do feel for you but I didn’t even bother installing either of them during the last round; saves me tons of space!
But by the relative silence on other aircraft, or few dedicated “specific problem” threads by make/model, the rule of thumb that “one person complains, nine who are satisfied don’t” - I suspect the GA flyers have it by more than a nose.
I do like that 172 as well. Even though I prefer glass cockpits, there’s just something basic and authentic about steam gauge planes that makes them appealing. It’s one of the reasons I love the Mooney so much.
In the last several weeks, I’ve been considering taking some flying lessons at the local club, and the single engine club trainer is an old C172M from the 70s. I’ve been doing a lof of circuits at my local airport in sim with the 172 it for some practice and familiarity in preparation.
For me the most performing a/c TBM930 !

A32NX mod which is working well atm.It is the plane I use more than the rest in the sim as I tend to do mostly IFR flights. For fun and low level flying the addon MB339 jet.
For me it’s the DR-400, maybe because it’s with it that I did my pilot’s license … many years ago! The Cessna 172 classic that I have also flown a few times in real life with a friend, a very nice and easy plane, but I did not have the certification to fly it (shhh! Do not tell the authorities!), The Cessna 208 Caravan, the DA-62, the Rutan Long Ez and the MB 329. I do very little liner, because it is no longer pure piloting, it is just computer management. I absolutely do not like TBM930, and small grasshoppers …
The C152. Gotta love the robust feel of it and it flies like a charm.
The Aermacchi MB-339 closely followed by the TBM although will obviously change when the F-15 is unleashed soon
I think the intent of the OP is to ask what’s most popular in the sim. I can only guess based on what I see but I would say the A320 and TBM appear to me to be the most common, followed by the 172 and maybe the Citation jets. Would be interesting to see actual data for this shared.
