Latest version (beta) working beautifully for me
Alpha was the best working version
SU4.
It was SU5 and WU6 that forced me to do all of those Water Fix mods.

For clarity SU7.5 Beta that has yet to be officially released.
SU3 when gusts was working in live-weather that made the landings not feel like on rails and the weather system that felt much more varied with this fix included though.
Then they only could have improved that with those increased updates of weather from meteoblue that they now have since su7 without METAR changing the clouds.
METAR destroys the dynamic feeling of weather with transisions and fixed circles of fog and clouds.
My favorite version was probably the initial release because I was excited for the future and confident that Asobo was going to be like other companies and actually WANT to fix the countless problems - at the very least for their reputation and to ensure they can get future contracts with Microsoft. I had no reason to believe that most of the sim would be broken for well over a year with not even an acknowledgement from the devs when it comes to a large percentage of the problems.
The ones with live weather and realistic thunderstorms. My memory isn’t so good as it was a while ago so I won’t try to guess the SU/WU number.
Worked fine and lookes great on Launch.

The WORKING initial release. I was excited and impressed.
Now we have holidays with no real weather and poor fps.
Really a shame
SU3 It looked gorgeous, performed ok and was very stable.
SU4 after that its all gone down hill especially for VR flyers
If I could go back to SU4 I would, in a heartbeat.
For VR, definitely SU4, when a lot of stuff was working OK and there was no shimmer bug as introduced with SU5. Best visuals compared to today. The next release was the “Xbox release” SU5 that messed up a LOT.

Each version before implementing the xbox & arcade stuff which broke nearly everything.
Visually the release version.
Functionally SU6 after the hotfix and with the finally removed logbook after the flight in SU7 it would have been amazing. But „Would have been“ must be followed by an IF.
The Last update is a best for me !
I use pc but i think xbox users also wanted to experience pre su5 quality.

Saying that SU4 or SU5 was better than it is now, just because a current bug from SU7 wasn’t present is certainly not the answer. I’m reasonably sure if I remember an earlier version fondly there surely were some bugs that I absolutely hated, but which today I don’t even remember anymore and which also have long since been resolved.
Overall people have a tendency to focus on the good things when they remember stuff, but focus on the negative in the present. That’s why you often hear old people saying that everything used to be better in the past. So saying earlier builds of MSFS were better has a definite ring of that to me
Currently I’m reasonably content with SU7 and the beta and I don’t wish back any earlier version. That’s the closest I can get to a definitive answer
