At first I thought it was just a bug with Simtoolkitpro. But now since I’ve started using Foreflight, it’s also happening in the logbook there. So it has to be something sim related, or me not doing something I should be while tracking my flights. Any idea what is causing this?
You need to exit Foreflight, or finalize the Foreflight logbook before exiting MSFS. If you exit MSFS while whatever program you are running to bridge to Foreflight is still running, it will set the last “known position” in your flight to latitude zero and longitude zero which is in the Gulf of Guinea in the Atlantic Ocean south of Africa.

I had a feeling it was something along these lines. Thank you!
