when moving the pitch trim on the 787 the nose doesn’t go up or down. I can see the indication moving and can also see the elevator moving up and down using the camera, but nothing happens. No AP or auto-throttle on
Is this the stock 787? If not disable all mods (just rename the community folder or use your mod manager) and test the stock 787.
Also do you see this problem in other stock airplanes? Test the A320, 747, Longitude , Cessna 172 etc
The stock 78X is just fine. Use that.

That’s unfortunately correct. Asobo turned the nicely flying Boeing into an Airbus with SU3 which means it uses the Airbus like flight path stability FBW system.
You can use stab trim , but the 787 will immediately counteract with opposite elevator, hence it has zero effect.
If you stop trimming, it willl immediately start to retrim.
@BlackSanta512 Not if you are trying to hand fly it. See above 
I only hand-fly from take off till I engage AP and when I disengage AP just before I’m home on the ground. I let it fly itself. I’ve done a bit of hand-flying it in the past though. I’m fine using a stick. I’ll play with it more…
