After reading your post, I tried it again and, no problems whatsoever using GSX in VR, with an HP Reverb G2.
The ESC menu works and show all option
The TAB menu works and show all Toolbar items
I can move the GSX menu window whenever I want, and it all works, I just completed a Pushback with the PMDG 737 entirely in VR, started the engines while pushback was being performed, all working normally.
Some things to note:

I’m using the latest Beta of the sim, the AA 1 update, version 1.30.7.0, not sure if this matters, but better to be precise.

I entered in VR mode as soon the Main Menu loaded, not after entering the flight.

I didn’t use VR controllers, left them powered off, so I’m using only the mouse for everything.
