The specific bind you are looking for is called “Toggle Visual Assistances Display”. You can see this in the screenshot below:
Once you have bound a key to this function, pressing it during Free Flight, Career Mode, or Red Bull Air Racing flight will toggle on or off the taxi ribbon, blue square aerial navigation assists, or race ribbon.
