You can ignore my advice. I mixed up the graphical settings with the controls and assistance settings. I found this for you. Hopefully it helps you a bit in the right direction.

These profiles do get synced with the cloud.
For those with the MS Store version (installed in default location on C:) that folder is at:
C:\Users\YOURUSERNAME\AppData\Local\Packages\Microsoft.FlightSimulator_8wekyb3d8bbwe\SystemAppData\wgs
