FYI, there are many wishlist & bug reports that address the aspects of the UI that you commented on.
For example:

The plane selection menu is frustrating to use…There’s also no option to filter aircraft by category (e.g., airliner, turboprop, GA) or mark favorites for quick access.
Bring back the FS2020 Aircraft Categories -
Selecting variants and liveries requires loading the 3D model, which makes the menu laggy…
Stop rendering aircraft in the selection menu -
The control bindings menu is a mess…
Completely change the 'bindings' screens for MSFS 2024 -
The UI is bloated with unnecessary animations and effects…

No UI scaling option:
Assignments in Control settings pages much too big not readable
Support smaller minimum text size or re-add support for Interface Scale setting
